New Favorite

Oatmeal and Chocolate Bars
New favorite treat.
Simple Nut Butter Oatmeal Cookies
Healthy Choices by Miriam Wengerd, p. 298

2/3 c nut butter (peanut, almond, cashew)
1/2 t salt (needed only if nut butter is unsalted)
1/2 c honey
2t vanilla
2c rolled oats

Mix first four ingredients then add oats.  Form balls.  Flatten balls on greased pan.  Bake 8-9 min at 350 F.  Try not to over bake.

Oatmeal and Chocolate bars
Use above recipe and press batter into the bottom of a 8x8 (or bigger) pan.  Bake.  Sprinkle with 1 cup of dark choc chips while it's still hot.  Spread melted chocolate and sprinkle w nuts!  Cool and cut.

I discovered this bar method when Petra was going to leave for a sleep over in 15 minutes and I wanted her to have something non gluten to share.  This combination is irresistible to me so I should make this only when there are lots of people around to help me eat the whole pan.
